This simple little gem of a recipe came from a 1999 preschool cookbook.
We've made it hundreds of times over the years as it's Sophie and Sadie's weekend favorite.

Emily's Oven Pancake
2 eggs
1/2 c. flour
1/2 c. milk
1/4 c. sugar
dash of vanilla
1 T of butter
- Preheat oven to 425 degrees.
- Let butter melt in ovenproof skillet while oven is preheating.
- Beat 2 eggs.
- Add 1/2 c. flour, 1/4 c. sugar, 1/2 c. milk and dash of vanilla.
- Stir until smooth.
- Bake in preheated skillet for 12 minutes.
- Sprinkle with powdered sugar and lemon or syrup.
I've been thinking about trying a dutch baby. I wonder what the nutritional information would be on it so I know if it'll clash too much with my diet.

ReplyDeleteHi Kim, it was one of those handwritten recipes with no info included. i started trying to figure it out on the weight watchers sight, but ran into technical difficulties! sorry.....how about a teeny slice with a big mound of fresh strawberries and a dash of syrup on top? that would be a good compromise i think. your kids will love it. have a good weekend kim and thanks for commenting!

ReplyDeleteHi Shari, thanks for the encouragement over on my blog. :) Every bit is so helpful. Yeah, I'm thinking about making this tomorrow morning since I'm having family over. Fresh fruit on top sounds good. I'm thinking about making my own little syrup alternative for it. I may try mixing a little agave nectar with a little lemon juice to put on top as well. I wonder if I could replace the sugar in the actual recipe with Stevia...I may experiment. I'll let you know my results. :) I really like your blog and the reason you started it. Have a good one!

ReplyDeleteI've been on the Jorge cruise Belly Fat cure diet and have lost about 15 lbs in 2 months. This recipe looks fabulous. I want to try it using soy flour unsweetened almond milk and stevia instead of flour and sugar. This diet unlike WW uses sugar/carb servings. i.e. 5 grms of sugar to 20 servings of quality carbs per day.A serving of carbs = 5-20 carbs are one serving
